  • 1 tablespoon vegetable oil 15 ml
  • 1 medium onion sliced
  • 3 garlic cloves minced
  • 1 cup coconut milk 240 ml
  • 1/4 cup coconut rum 60 ml
  • 1 tablespoon brown sugar 12 g
  • 1 teaspoon ground allspice 2 g
  • 1/2 teaspoon ground cinnamon 1 g
  • Salt and black pepper to taste
  • Fresh cilantro or parsley for garnish optional

Instructions

  • Heat vegetable oil in a large skillet over medium heat.
  • Season chicken thighs with salt and pepper.

  • Add minced garlic and cook for 30 seconds until fragrant.
  • Pour in coconut rum to deglaze the pan, scraping up any browned bits.

  • Garnish with fresh cilantro or parsley before serving.
