Prep Time 15 minutes minutes Total Time 30 minutes minutes
2 medium ripe Roma tomatoes finely diced (about 1 1/2 cups / 225 g) 1/2 small red onion very finely diced (about 1/2 cup / 75 g) 1/2 cup finely chopped fresh cilantro about 20 g 1/4 cup finely chopped fresh flat-leaf parsley about 10 g 1 small garlic clove finely grated or minced 1 jalapeño seeded if preferred and very finely minced (about 2 tablespoons / 20 g) 2 tablespoons red wine vinegar 30 ml 2 tablespoons extra-virgin olive oil 30 ml 1/2 teaspoon kosher salt plus more to taste (3 g) 1/4 teaspoon ground black pepper 0.5 g 1 small baguette or 6 slices crusty country bread for serving (about 10 oz / 280 g)
Dice the tomatoes and red onion as evenly and finely as you can. Chop the cilantro and parsley, mince the jalapeño, and grate or mince the garlic.
Add the tomatoes, onion, cilantro, parsley, garlic, jalapeño, red wine vinegar, olive oil, salt, and pepper to a medium bowl.
Stir until the mixture is evenly combined. Taste carefully and add a small pinch more salt, pepper, vinegar, or jalapeño if needed.
Let the pebre stand at room temperature for 15 minutes so the flavors can mingle. Stir once more before serving.
Slice the baguette or country bread and serve it alongside the pebre for scooping. Toast the bread if you like.
