3/4cupheavy cream180 mL
1/3cupchopped fresh dillplus more for serving (20 g)
1tablespoonfresh lemon juiceoptional (15 mL)
Instructions
Melt the butter in a large soup pot or Dutch oven over medium heat. Add the onion and carrots. Cook, stirring occasionally, until the onion is softened but not browned, about 5 minutes.
Add the potatoes, broth, bay leaf, salt, and pepper. Bring the broth to a boil, then lower the heat to maintain a gentle simmer. Cook until the potatoes are fork-tender, about 12 to 15 minutes.
Reduce the heat so the soup is barely simmering. Add the salmon pieces in a single layer and cook gently until opaque and easily flaked with a fork, about 4 to 6 minutes. Avoid vigorous boiling so the salmon stays in pieces.
Remove the pot from the heat. Stir in the heavy cream, dill, and optional lemon juice. Remove and discard the bay leaf.
Taste the soup and add salt or pepper as needed. Ladle into bowls and top with extra dill. Serve warm with rye bread, crusty bread, or crispbread.
