Ingredients

  • 4 cups finely crushed ice about 600 g, plus more as needed
  • 1/2 cup sweetened red beans drained (about 85 g)
  • 1/2 cup sweetened white beans drained (about 85 g)
  • 1/2 cup nata de coco drained (about 120 g)
  • 1/2 cup jarred or canned young coconut strips drained (about 85 g)
  • 1/2 cup ripe jackfruit strips drained and chopped (about 85 g)
  • 1/2 cup well-drained canned sweet corn kernels about 80 g
  • 1/2 cup ube halaya purple yam jam (about 120 g)
  • 1/2 cup evaporated milk 120 mL
  • 1/3 cup sweetened condensed milk 100 g
  • 6 small scoops vanilla ice cream about 1 1/2 cups total (about 225 g)
  • 3/4 cup prepared leche flan cut into 6 pieces (about 150 g)
  • 2 tablespoons toasted shredded coconut 10 g, optional

Instructions

  • Set out six clear 12-ounce (355 mL) cups or dessert glasses. Stir the evaporated milk and sweetened condensed milk together in a small pitcher until smooth.
  • Divide the sweetened red beans, sweetened white beans, nata de coco, young coconut, jackfruit, and corn among the cups. Add a spoonful of ube halaya to each cup.
  • Pile about 2/3 cup (100 g) crushed ice into each cup, gently pressing it down just enough to make room for the toppings. Add a little more ice if needed so the cups are nearly full.
  • Drizzle the sweetened milk mixture evenly over the crushed ice. Top each cup with a small scoop of vanilla ice cream and one piece of leche flan. Sprinkle with toasted coconut, if using.
  • Serve immediately with long spoons. Encourage everyone to mix the layers together before eating so each bite combines creamy milk, ice, fruit, beans, and toppings.
